Spicy Cucumber Salad Dressing

It’s that time of year when you’re probably going to be eating a lot of salads, as they’re quick to prepare and suitable for warm summer evenings. Bring a touch of excitement to your salad leaves by trying this spicy cucumber salad dressing recipe.

What do I do?

  • Place the vinegar, water, sugar, garlic and ginger in a pan and bring to the boil.
  • Simmer for 2 minutes, stirring continuously until the sugar dissolved.
  • Add a little salt and leave to cool.
  • Place the cucumber, onion and chillies into a sealable container or jar.
  • Strain the cooled sauce using a sieve and stir thoroughly.
  • The dressing can be stored in the fridge for up to 7 days.

My Top Tip:

  • Dressings such as this are great over salad leaves, but you can make it even more enjoyable serving with chicken, crunchy seasonal vegetables and even rice noodles.
