This recipe is suitable for serving to vegetarians if the bacon lardons are left out.

 

What do I do?

Saute courgettes and garlic in oil gently for 5 minutes.  Add the stock and simmer  for 10 minutes.  Add the milk, creme fraiche, and cream cheese, and heat , stirring, until the cheese has melted.  Cool and blend.


Cook and drain pasta.


Fry the bacon lardons until crisp.


Toss the pasta in the blended sauce to coat, and reheat gently.


Serve in bowls with crispy lardons and grated parmesan.

What Do I Need?

  • 300gm courgettes, topped, tailed and sliced into rings
  • 2 tbspn olive oil
  • 2 garlic cloves peeled and chopped
  • 150 ml veg or chicken stock
  • 150 ml milk
  • 3 tbspn creme fraiche
  • 100 gm light cream cheese with chopped herbs
  • 100gm smoked streaky bacon cut into lardons
  • grated parmesan
  • 400gm spaghetti

And yet another recipe for that prolific courgette! I eat them almost every day in every shape and form . When I bring two carrier bags home , I have the cry' not more'. Then when I complain 'not cotgettes again' , I am told 'you grow them you eat them !'.

Or, you could give them the same with vegetarian bacon - yes,  there is such a thing!   This recipe sounds very good and I shall try it with the courgettes my neighbour keeps giving me (and veggie bacon!)
