Elderflower Champagne

Looking for that perfect summer drink when entertaining friends? Elderflower champagne is ideal for those barbeques and garden parties over the coming months. Easy to prepare, and only taking two weeks to mature, this is a cool drink guaranteed to add fizz to your evening.

 

What do I do?

Boil the water and pour the sugar in to dissolve it.


Cool the water before adding the elderflower heads, the juice of two of the lemons, slices of the other two lemons, and the vinegar.


Cover with a cloth and leave to stand for 24 hours.


Strain with a fine sieve, squeezing the elderflowers to release even more flavour.


Store the liquid in strong screw-top bottles.


Leave for 10-14 days before drinking. The champagne should be consumed within a month.

 

My top tips

  • For a more potent drink try using the berries of the elder tree instead. Or alternatively you could use the berries to make elderberry marmalade – perfect for the breakfast table.

What Do I Need?

  • 8 litres of water
  • 1.25 kg of sugar
  • 8 large elderflower heads
  • 4 lemons
  • 4 tbsp white wine vinegar
