Creamy Mixed Vegetables

It's a nice easy recipe which produces some very rich and tasty veg. It's something I cook for myself which I really enjoy, hopefully you will too and it's not just that I have strange tastes.

 

What do I do?

Preheat your oven to around 180° to 200°
Chop the Vegetables and Onion into reasonably large chunks, removing the seeds and stalk from the pepper and the Aubergine skin (it can be left on but I prefer to remove it).
Place the butter into the bottom of a reasonably large oven proof dish with a lid and pop it in the over for a minute to melt the butter.
While the butter is melting chop the Garlic into reasonably small pieces.
Remove the dish and swirl the butter around to coat the bottom of the dish.
Mix up the Vegetables and the chopped garlic and pop it into the oven proof dish.
Drizzle the cream over the top of the Vegetables coating them as evenly as possible.
Sprinkle salt and pepper over the top of everything to taste.
Pop the lid on and put it in the oven for around 30 – 40 minutes.
Take it out and then eat it :)

 

My top tips

  • For a bit of added zing you can chop up a red chilli and mix that in at the same time you mix in the garlic.
  • You can also try different Veg
 

Serves 2 - 4 (main Course or accompaniment)
 

What Do I Need?

  • 1 Aubergine
  • 1 Courgettes
  • 1 Pepper (Red or Orange to add a bit of colour)
  • 1 Red Onion
  • 2 Garlic Cloves
  • Salt and Pepper
  • A small piece of butter
  • 1 Pot of single cream
